Cut the Fat, Cut the Calories, and Still Enjoy the Egg

So you know that eggs are high in cholesterol. Okay, but they also are delicious, low in fat, a good source of protein and contain certain important micronutrients like lutein. Moreover, of all the dietary steps that you might take to lowering cholesterol in your arteries, the dramatic reduction in dietary cholesterol may be one of the least effective. More effective nutritional solutions focus on the way your own body produces and processes the cholesterol.  We explore these issues in-depth in The Kardea Gourmet

The larger problem with eating an egg is not the egg itself, but what you eat with the egg.  Foods high in salt and saturated fats like bacon, ham and many cheeses can do more to harm the arteries.   Frying it all in butter adds to the problem.  So here is a recipe that recreates the breakfast sandwich.  Beyond minimizing the nutrients that harm, it also adds some foods that help -- like the nutrient-rich tomato, the whole grain bread and a Kardea herb blend.

Ingredients

1 Egg (or 2 eggs whites)
1sliTomato
2sliWhole grain bread (100% Whole Grain)
  Kardea French Fine Herb Blend (To Taste)
  Black Pepper (To Taste)
1 1⁄5tOlive Oil (or teaseed oil )

Instructions

I like my eggs fried, not scrambled, but either way is fine for this sandwich.
