I am pleased to introduce the Kardea’s Mediterranean Spice Blends. The Harvard School of Public Health and the United States Department of Agriculture studies recognize spices and herbs as some of the best sources of antioxidants. 
What’s more, spices and herbs, coupled with the right cooking techniques, support each of our efforts to reduce the amount of salt in the foods we love.
 
And we also know that spices and herbs can reduce inflammatory compounds created in the cooking process.
 
Blending adds to the power of spices and herbs. Different compounds in these spices and herbs work together with the nutrients found in other foods to support health.

  • The research revealing the health virtues of a Mediterranean diet took place in the area of Southern Italy and Greece. Our Classic Mediterranean blends herbs commonly used in this region. Adding great taste and antioxidants, use in salads, marinades and sautѐes. Ingredients: Oregano, Basil, Thyme, Marjoram, Sage, Parsley, Rosemary, Dill and Savory.

     French Fine Herb

     

    “The French feeling about herbs is that they should be an accent and a complement, but never a domination over the essential flavors of the main ingredients,” Julie Child wrote in Mastering the Art of French Cooking. Our French Fine Herb blend builds on this French culinary tradition. Use in salads, marinades and sautѐes. Ingredients: Chives, Tarragon, Parsley Flakes, Thyme Leaves and Dill Weed

  • North African Spice Blend

    On the south coast of the Mediterranean Sea lies North Africa - Morocco, Tunisia, Algeria, Libya, Sudan and Egypt. As coastal countries, North African cuisines blend the traditions of European, Arabic and African cultures.
     
    In European cooking, savory spices and "sweet" spices are typically kept apart. Savory spices including cayenne and other hot peppers, paprika, cumin and most herbs, like oregano, basil and cilantro, are used in the preparation of lunches and dinners. The sweet spices, like nutmeg, cinnamon, cloves and mint, are used at breakfast and in desserts.
     
    In the cuisines of many other cultures, sweet and savory spices are blended to make excellent stews, curries, salads, and vegetables. North African cooking superbly blends sweet and savory spices to create full flavored main dishes or delicious sides. Adding great taste and many antioxidants, use with whole grains, salads, vegetables and beans, soups and stews, dry rubs. Ingredients: Coriander Powder, Allspice Ground, Fennel Powder, Black Pepper Ground, Cumin, Cinnamon, Anise Seed Ground, Cardamom Ground, Ginger Ground, Nutmeg Ground and Turmeric.

    Phoenician Spice Blend

    Ancient Phoenicia occupied the territories now defined by modern Lebanon, Syria, Jordan, Israel and the Palestinian Territories. While great differences exist among the people of these regions, a spice blend known as Za’atar binds the culinary traditions. In the Kardea Kitchen, we use this blend with vegetables, sea food, whole grains and beans.  Ingredients: Sesame Seeds, Basil, Garlic, Onion, Parsley, Celery Seed, Paprika, Oregano, Ground Lemon Peel, Thyme, Dill and Red Pepper.

     Trade Routes Sweet Spice Blend

  • If you are looking for a great source of antioxidants,  look no further than our trade routes sweet spice. Gram for gram, cinammon and clove are two of the most potent antioxidant available.
